This wine is made by rehydrating the grape pomace after it's pressed to re-extract sugar and flavor. The result is a very light and low in alcohol wine. We used Zinfandel and Sauvignon Blanc grapes for this piquette resulting in a light red final product. We added back about 40% rose wine to give stability and body to the wine. Right before bottling we added a bit of honey to referment in bottle and give the wine a slight frizzante flare.
It's light, fresh and slightly fizzy...need we say more? Didn't think so.
