Grapes: 85% Sauvignon Blanc, 15% Semillon
Vineyard: Randle Hill (Certified Organic, Sustainable), one of 25 vineyards in the Yorkville Highlands AVA. The York family settled in southern Mendocino County over 130 years ago. they have tended to their vineyards without the use of synthetic pesticides, herbicides, or chemical fertilizers for over 30 years, gaining CCOF Certification in 1986. AVA: Yorkville Highlands, established in March 1998. This area lies along the headwaters of Dry Creek and Rancheria Creek in the rolling hills of southern Mendocino County, divided on either side by Highway 128. Marked by high ridges and land troughs, the soil in Yorkville Highlands is characterized by gravel and old brittle rock. Influenced by marine air over half of the year, the area sees hot summers and higher than average rainfall than neighboring viticultural areas.
Vines: The York family employs a very “hands off-hands on” approach in the vineyard, manipulating the vines as little as possible and harvesting all fruit by hand. They employ a small team of humans and a sizable team of sheep.
Method: Half of the fruit was direct pressed, fermented, then left in neutral barrels for 5 months of élevage. The other half of the fruit underwent carbonic maceration for a full month before being pressed into stainless for 5 months. Each lot was racked once before blending into stainless prior to bottling.
